Sometimes I just love simplicity.
I think it is amazing to take some really simple ingredients and make them look and taste amazing. It adds a little gourmet to the plate.
You can also serve this as an appetizer by adding toothpicks for easy pickup.
Having a mandolin kitchen slicer makes this dish completely easy.
All I used:
1/4 cup Healthy Italian Dressing
Fresh Ground Pepper
Peel your cucumber.
Using your mandolin slice your cucumber sideways so you get the full length of the cucumber with each slice.
Roll the cucumber slices one at a time into spirals and put them into a compact dish to help them maintain their shape.
Pour Italian dressing over the top of the dish full of cucumbers and sprinkle fresh ground pepper.
Refrigerate until ready to serve. You want to serve these within a few hours so they don't get soggy.
