Cauliflower Poppers


Today is National Celiac Disease awareness day! 
So many people just look at "gluten-free" as a fad diet. Let's spread the word and let them know it is a matter of life and death for those suffering with Celiac!

In our household eating healthy is easy. If you don't have bad food in your fridge and pantry, you won't eat it. That does not mean we don't like to snack and munch on things. I am very thankful my husband is such a raw veggie lover. Sometimes I like something hot and flavorful to snack on instead. These poppers hit the spot. We settled down and munched on these while we watched a movie. A fun movie night without the guilt.  

Cauliflower Poppers

Serves 4

1 large head of cauliflower, cleaned and cut into pieces
2 tbsp olive oil
1 1/2 tsp smoked paprika
1/2 tsp chili powder
1/2 tsp mesquite seasoning
1 tsp salt
1/2 tsp pepper

Preheat oven to 425 F degrees. Line a baking sheet with aluminum foil or parchment paper.
In a small bowl mix the paprika, chili powder, mesquite seasoning, salt, and pepper together.
In another large bowl toss the cauliflower with the olive oil so that each piece is covered. Sprinkle the spices over the cauliflower pieces and toss to make sure each piece is coated with the spice mixture.
Place the cauliflower on the baking sheet and bake for 30 to 45 minutes or until golden brown. Turn every 15 minutes to ensure even browning. 
Serve!
