Confetti Kale Salad w/ Dijon Dressing



Kale! Because of it's great health benefits, I am sure you are seeing it everywhere. It is on the news, and popping up more and more in restaurants. Why? Because choosing super-nutritious kale on a regular basis provides significant health benefits, including cancer protection and lowered cholesterol. According to Web MD "One cup of kale contains 36 calories, 5 grams of fiber, and 15% of the daily requirement of calcium and vitamin B6 (pyridoxine), 40% of magnesium, 180% of vitamin A, 200% of vitamin C, and 1,020% of vitamin K. It is also a good source of minerals copper, potassium, iron, manganese, and phosphorus. Kale’s health benefits are primarily linked to the high concentration and excellent source of antioxidant vitamins A, C, and K -- and sulphur-containing phytonutrients."

I like Kale in all forms. Raw, cooked, fried. It is tasty and healthy. This salad is now my new favorite. You can eat it as is, or use it in a wrap the next day for lunch. Yum!

Confetti Kale Salad w/ Dijon Dressing

6 leaves kale
1 cup diced yellow or red bell pepper
1/4 cup olive oil
2 Tbs. sweet onion
1 Tbs. agave
1 Tbs. Dijon mustard
½ lemon, juiced
1 tsp. sea salt
1/2 tsp. black pepper
1/2 Tbs. garlic, minced
1 tsp. ground mustard

Wash and dry kale and then strip leaves from stem. Discard the stem. Rip leaves into bite sized pieces.
Add diced bell peppers to kale.

For dressing place oil, onion, agave, mustard, mustard powder, lemon juice, garlic, salt and pepper in a high powered blender and blend until smooth.

Pour over salad and mix and toss. Serve and enjoy. This salad will keep in a sealed container in fridge for up to 3 days.
