Wild Rice Stuffing

Gluten-Free Wild Rice Stuffing and a GIVEAWAY

I don't serve bread stuffing anymore. I used to make a nice gluten-free one, but as the years have gone by, we are getting more and more used to eating bread-free, and traditional bread stuffing just isn't on our A list anymore. So this year I made a Gluten-Free Wild Rice Stuffing. It was yummy, and a big hit at the Thanksgiving table. I will be making it again for our Christmas feast. You can add more veggies, or less. For instance, if you don't want mushrooms, just substitute your favorite veggie in it's place. It is an easy recipe to adapt to your taste. My husband is crazy for wild rice. It is wonderful in this recipe. Following the recipe you will have an opportunity to win this wild rice from Naosap Harvest. Gluten-Free Wild Rice Stuffing

1/2 Cup Uncooked Wild Rice
2 Cups Vegetable Stock
1/2 Cup Dry White Wine 
1/2 Cup Uncooked White Rice
1/2 Teaspoon Poultry Seasoning
2 Cups Fresh Mushrooms, Sliced
1 Cup Carrot, chopped
3/4 Cup Green Onion, sliced
1/2 Cup Red Bell Pepper, chopped
2 Tablespoons Butter
3/4 Cup slivered almonds
1/2 Cup Parmesan Cheese
Salt and Pepper to taste

Rinse rice in a strainer for one minute and then drain.

In a large saucepan combine brown rice, vegetable stock, white wine and poultry seasoning. Stir together and heat to boiling. Reduce heat and simmer, covered, for 40 minutes. Add white rice when the wild rice has twenty minutes left to cook.
In a large skillet, melt butter and sauté mushrooms, onion, carrot, and sweet pepper over medium heat for 5-8 minutes or until tender. 
Stir in almonds and cheese then add salt and pepper to taste.
Mix rice mixture and vegetable mixture. Serve immediately.
