Christmas Macaroons and a Giveaway!

Tis the season for yummy festive cookies. I am starting off my cookie bake off with these Christmas macaroons. I have a coconut macaroon giveaway from Hail Merry, so I thought I might as well make traditional french macaroons to share with you. These cookies scream Christmas! Enjoy!
Christmas Macaroons

Adapted from Penguin Says Feed Me

For the macaroons:

3 egg whites (room temperature)

1 cup almond meal flour
1 1/3 cup powdered sugar
1/2 cup sugar

Separate your eggs and leave your egg whites on the counter until they become room temperature.

Sift almond flour, and powdered sugar into a bowl. Discard any bits that do not fit through the sifter.


Beat egg whites until soft peaks form, then gradually add the sugar while beating until stiff peaks form. 


Add the dry and mix quickly with a spatula a few times to get rid of any large air bubbles. Once the ingredients are starting to incorporate, slow down and fold the mixture until it falls in ribbons from the spatula. 
If coloring, add 2 tsp of your food coloring and stir in. 
Pipe circles onto baking sheets lined with parchment paper. When bubbles to come to the surface, pop these with a toothpick.
Leave the shells out to dry for 30 minutes to an hour to allow a skin to develop on top – when you can touch the surface without any mixture sticking to your finger, they are ready.
Bake your macaroons for 20-25 minutes, depending on your oven. The macaroons are usually ready when they peel back from the baking paper easily. 
When they have finished baking, carefully peel the macaroons from the baking paper and place onto a wire rack to cool.
For the buttercream:
1 stick (1/2 cup) butter, softened
1 cup powdered sugar
1 tsp vanilla extract
2 tbsp milk
2 large candy canes, crushed

Add butter, powdered sugar, vanilla and milk to a mixing bowl. Mix until light and fluffy.
Fill the plain macaroon shells with buttercream..
Then roll in crushed candy canes.
Place in an airtight container to mature in the fridge for at least 24 hours.
