If you are like me, you are constantly wondering what to pack for lunches. I pack my husbands lunch every single day. I also make lunch for my daughter, but she usually is home for lunch. Still, coming up with ideas can get tough. I rotate through homemade ranch and hummus and onion dip and whatever I can think of to get veggies into my kids and husbands diet. They are dippers. Since today I am hosting a giveaway for Justin's Nut Butter I wanted to come up with a nice recipe that uses their yummy nut butters. I usually use Tahini when making hummus, So I decided, why not try almond butter instead of sesame seed butter? It worked wonderfully! Almond Butter Hummus
3 Tbsp almond butter
3 Tbsp fresh lemon juice
1 Tbsp plus 1 teaspoon olive oil
1/2 tsp ground cumin
1/2 tsp pepper
1/2 tsp sea salt
1 can chickpeas (15- 16 oz)
1 garlic clove crushed well
7 tablespoons water
I placed all my ingredients in the blender and blended until smooth. You can also use a food processor, but mine bit the dust a while back so I use my blender for everything.
It is the perfect lunch snack. It went really well with Ener-G's gluten-free pretzel bread which will also be part of an upcoming giveaway.
