Vegan Strawberry Sorbet

  
This weekend I had the opportunity to cater dessert at a birthday party. The birthday girl has special dietary restrictions. Vegan, Gluten-free, Sugar-free. That may seem like an impossible task for some. I welcome the challenge. I decided to make a sugar-free strawberry sorbet, topped with sugar-free chocolate covered strawberries. It is simple to make if you have an ice cream maker. 


Vegan Sugar-free Gluten-Free Strawberry Sorbet 
adapted from the wishful chef

1 pound fresh strawberries, chopped
1 cup coconut milk
1 lime, juiced
2 tablespoons coconut nectar
1 TBSP stevia



Add all ingredients to blender or food processor and puree until smooth.

Place puree mixture in ice cream maker and churn until creamy and thick. If you’re planning on freezing this overnight, add a splash of vodka now (This keeps the sorbet from getting too hard). Transfer to an airtight container and store in freezer
