Crock Pot Navy Bean Soup



There is something about having a nice soup in the slowcooker that makes me happy all through the day. I guess it is because no matter what the troops ask me to make, I know there will be something for me. Unfortunately most of the kids around here don't touch soup. I just don't get it. I always feel so full and satisfied after a great soup. Since I just keep getting older and older and it makes it harder and harder for me to stay fit... I love a hearty low calorie soup. If my calculations are correct.. if you have a nice big bowl of this soup it is 120 healthy calories. Now most of you like your navy bean soup with ham or some other kind of meat. Add it! I just happen to like it just the way it is.  It is so easy to make and so full of flavor. There are other recipe's out there that call for packaged soup mix or canned soups. I prefer to make it from scratch. If you are like me, then you will love it!


Slow Cooker Navy Bean Soup Gluten Free

4 medium carrots, thinly sliced 
4 celery ribs, diced
1 medium sweet onion, chopped 
1-1/2 cups dried navy beans 
4 cubes chicken bouillon, crumbled 
1 1/2 teaspoon onion powder 
1 tsp sea salt 
1 teaspoon dried parsley 
1 teaspoon dried sweet basil 
1 teaspoon garlic powder 
1 bay leaf 
1/2 teaspoon pepper 
8 cups chicken broth

Optional: Some people like ham or bacon in their navy bean soup. If you like that, you can add a cup or two of cooked ham or bacon.
Soak your navy beans in 8 cups of water overnight. Drain.
In a slow cooker, combine all ingredients, stir to blend.

Cover and cook on low for 9-10 hours or until beans are tender. Discard bay leaf and serve.
