Sweet Onion Egg Sandwiches gluten free



 With Taylor's work schedule being so different from our every day life schedule, working double shifts until 6am, she is not able to get up until 1pm a lot of times. She comes down tired and hungry. The need for quick meals at random times has increased. Today I threw together a meal for her with just 4 main ingredients, plus salt and pepper, in under 10 minutes. 
Here is what I used:

2 Eggs
2 slices of sweet onion
1 roma tomato sliced
Udi's gluten free hamburger buns
Salt and Pepper to taste. 

Heat a non-stick skillet over medium high heat. Add 2 onion rings to the pan and crack an egg in the center of each. It is ok if it spills over the side a bit, but if you cut the onion slice thick, this won't happen.  
Cook until whites are cooked through, but yolks are still runny. 
I toasted the gluten free udi's hamburger bun in the toaster.
Add the roma tomato slices. 
Top with egg and onion and season with salt and pepper to taste. 
 
You can add a slice of ham or bacon if you wish. I was going for a healthier option.
