Meatball Flatbread

I thought I would share with you all that our Sunny, warm, California paradise has been missing for two days. We had a storm roll in. Contrary to how it was when I lived in Oregon. I love it when a storm comes now.First of all, knowing the sun will be back in a day or two helps. Second, there is something about pounding rain on the roof at night that is very cozy. I get in the mood to make cozy comfort food and sit by the fire. Yes, I admit it. I do love rain now. But only in doses. Knowing we don't need to water our citrus trees for a few days is nice. People hide from the rain here. You can go drive down any street and it almost looks like a ghost town. Since they don't need to get used to how to drive in the rain here, they just stay home. You can go to the grocery store and there won't be any lines. Checkout is a breeze when everyone else is hiding indoors. There is supposed to be 10 foot waves today at the beach, so all the surfers are headed out to catch the big one. I was going to go watch, but didn't. 
So on to today's recipe...
Before her diagnosis, One of Taylor's favorite quick things to get was a meatball subway sandwich. With Venice Bakery Gluten Free Flatbread I am able to easily create this lovely dish for her at home in no time at all. I like to make the meatballs and sauce ahead of time and then just reheat it and add it to the flatbread. It gives Taylor quick meal options on her busy work days. 
Gluten Free Meatball Flatbread
Venice Bakery Gluten Free Flatbread
1 lb ground turkey (you can use beef if you prefer red meat)
1/2 one sweet onion
4 gloves of garlic minced
1/2 cup crushed up tortilla chips
1/2 cup Parmesan cheese
1 egg
salt and pepper to taste
Parmesan cheese 
Olive oil
1 jar of your favorite marinara sauce.

Preheat your oven to 350 degrees. Gather all your ingredients. 
Add onion, garlic, chip crumbs, parmesan, egg, salt and pepper to a large bowl

Add the ground turkey, mix well with your hands and form into meatballs. 
Add olive oil to a large pan and sear the meatballs until they are brown on each side. 

Add the meatballs to a large 9x13 baking dish. Add your marinara. You can use store bought, or your own marinara.  On a separate baking sheet add the flatbread and bake at the same time.
Bake for 20 minutes. 
Top the crispy flatbread with the meatballs and sauce. Top with parmesan cheese and your favorite herb.
