Gluten Free Lady Fingers = Tiramisu

Did you see the post for Tiramisu from Kankana? Beautiful. One problem. My daughter can't eat it because of those little things called lady fingers. Actually I am going to make it not a problem... I just have to make homemade gluten free lady fingers. I am up for the challenge. I am after all going to a dinner party. Seems like a perfect thing to bring, no? 
After reading over several recipes that all were pretty much the same for normal gluten filled lady fingers. I realized I was just going to have to come up with this on on my own. They turned out delicious. (I couldn't help myself from eating several). My daughter ate several too. My recipe combined with Kanakanas for the Tiramsu made for one happy daughter, and several happy guests at my dinner party. Here is what I did:

Gluten Free Ladyfingers:
  • 8 eggs, separated
  • 1 1/3 cup white sugar
  • 2 cups gluten free all-purpose flour
  • 1 tsp guar gum
  • 1 teaspoon baking powder
  • Preheat oven to 425 degrees F
    Line two baking stones or sheets with baking parchment or silpat.
    Use a large gallon ziplock bag and cut one inch out of the corner.
    Place egg whites in bowl and beat on high until soft peaks start to form.


    Slowly add 4 tablespoons of the sugar and continue beating until stiff and glossy. In another bowl beat egg yolks and remaining sugar.
     Whip until thick and very pale in color.
    Sift flour and baking powder together.
    Fold half the egg whites into the egg yolk mixture.
    Fold in flour, and then add the remaining egg whites.
    Transfer mixture to pastry bag
    and pipe out onto prepared baking sheet into lines.
    Bake 10 minutes.         
          
    Back to the glorious Tiramisu posted by  Kankana. I had to double it.
    • 6 egg yolks
    • 1 cup sugar
    • one 8oz package cream cheese
    • 48 lady fingers
    • 4 tbs coco powder plus extra for dusting
    • 2 cups strong espresso, cooled down to room temperature
    • 1/2 cup semi -sweet chocolate shavings, for garnish
    • Whipped Cream
Beat the egg yolks and sugar in an electric mixer until they are thick and pale.



Add cream cheese and continue beating until smooth.
Add 4 tbs of coco powder and mix until its thoroughly combined.
Dip each ladyfinger into espresso for about a second and place on the bottom of the serving bowl. I put them in the bottom of a red wine glass.


Pour the cream cheese mixture over the ladyfingers.

Repeat....Arrange another layer of soaked ladyfingers and top with remaining cream cheese mixture.
Cover the bowls with plastic wrap and refrigerate overnight.
Cover with Whipped Cream and Sprinkle with chocolate shavings.
I added a gluten free chocolate chip biscotti for a nice touch. These biscotti are really good. From EnerG. Everyone gobbled them up and could not believe they were gluten free!
