Sauteed Vegetables


Veggies. They are so simple to make. Eat them raw, baked, sauteed, roasted, grilled etc... Still sometimes there is a recipe that is just perfect. This veggie recipe was just that. So much so, that after dinner, my husband asked if he could eat the rest of what was in the pan. He gobbled it all down because they were cooked to perfection. 
I got this recipe from Gluten-Free Goes Gourmet  A new cookbook from nutrition and wellness coach and expert, Vicky Pearl. If you are looking for a kosher gourmet gluten-free book, then look no further. 

Sauteed Vegetables

3 TBSP Olive Oil
1 Large Onion , thinly sliced in half-circles
2 cloves garlic, sliced
2 small zucchini, thinly sliced
1 red pepper thinly sliced
1 yellow pepper thinly sliced
1 green pepper thinly sliced
1/2 tsp kosher salt
1/8 tsp freshly ground black pepper
1/2 tsp dried oregano

Heat oil in a skillet set over medium heat. Add onion and garlic; saute for about 3 minutes or until translucent.

Stir in zucchini, peppers, and spices. Cook, stirring occasionally, for 5-7 minutes or until tender crisp.
