Bacon Wrapped Sea Scallops

What is your favorite seafood? My husbands is Scallops. I don't think he has ever met a scallop he didn't like. Since the american way of thinking is "everything is better with bacon", you can imagine my husbands delight to receive these babies. They look all fancy and like they took hours to make. Let them think that. They are actually very simple to make. Bring these to dinner and impress your guests!

Bacon Wrapped Sea Scallops
adapted from Snippets of Thyme

1 1/2 pounds scallops, rinsed and dried
1 pound thin sliced maple bacon strips cut in half.
Sea Salt
Fresh ground Pepper

Preheat your oven broiler. Spray a rimmed baking sheet with nonstick spray.
Wrap each scallop with a piece of bacon and secure with a toothpick.

Place the bacon-wrapped scallops onto the prepared baking dish and season them with salt and pepper. Cook them under the broiler on high for about 20 minutes, or until the bacon is cooked through and the top is browned.

I served mine with a light Cucumber, Tomato, Balsamic Salad.

  1. These were served at the NYE party I attended a few weeks ago, and my BFF and I pretty much camped at the platter. Totally addicting!
