Nothing makes me happier than making my family yummy treats for next to no cost at all. Living where I do in Southern California. I have a limitless supply of Limes on my tree in my backyard and Strawberries are $0.99 per container this time of year. Time for me to get creative again with
Strawberries and Limes. I was not sure how this one would turn out, but they are great! You can easily make this recipe sugar free by using Stevia instead of Sugar.
Strawberry Sweet Tarts
adapted from Lick The Spoon
Crust:
1 stick of butter (8 TBSP)
1/4 cup sugar -or- 1/4 cup Stevia for sugar-free option
1 tsp vanilla extract
Filling:
2 1/2 cups fresh strawberries
1 cup sugar
-or- 1 cup Stevia for sugar-free option
2/3 cup Lime juice (about 3-4 medium lemons)
zest of 3 Limes
3 egg whites
1 egg
pinch of salt
Preheat the oven to 375 degrees. Line a 11x7 inch baking dish with parchment paper.
To make the crust, mix together butter, sugar, flour and mix well.
Press the dough evenly into the bottom of the prepared baking dish.
Bake for 20-25 minutes or until just golden brown. Remove from oven and cool.
To make the filling, Blend your strawberries until smooth in a blender.
Then pour all strawberries in a fine sieve and press them into a large bowl with the back of a spoon. Discard the caught seeds and skin. Add the sugar, juice, zest, whites, egg, flour and salt and combine, until mixed well.
Pour the strawberry mixture onto the crust you made and place in the oven.
Bake for 30-35 minutes.
Chill in the fridge for at least 2 hours before cutting. Best if chilled overnight.
