Banana Parfait in a jar


I have been working at getting more bananas in my daughters diet. She is not that fond of them because she thinks they are mushy. So I have to serve them in a dessert form, or pancakes or bread. She has been having a lot of hardcore leg cramps and I was told potassium helps with that. Since bananas are packed full of potassium, I have been sneaking them into her food, desserts and smoothies. Vitamin deficiency is a huge problem with Celiac's. Especially those that went years without knowing their illness. The Villi gets too damaged to absorb the nutrition. There are actually a lot of foods I have been feeding her to help with the Potassium deficiency. Here is a chart of a few high potassium content fruits and vegetables along with their potassium measurement, and the amount to serve, for any of you that may be having the same problem.

Papayas  1 papaya 781 mg
Lima Beans  1 cup 955 mg
Plantains  1 medium 893 mg
Artichokes  1 cup 644 mg
Bananas  1 banana 422 mg
Tomatoes  1 cup 528 mg

Cantaloupe  1 cup 427 mg
Pears  1 pear 333 mg
Mangoes 1 mango 323 mg



There is something simple and fun about serving food in a jar. I have grown very fond of my wide mouthed jars. They are easy to store and easy to eat out of. This is a fun quick recipe. Perfect for a picnic or a treat to take in your packed lunch. 
Banana Parfait in a jar
Bananas
Heavy Whipping Cream
8 oz Good Semisweet Chocolate
Vanilla Extract
Powdered Sugar
Now... if you have not mastered making whipped cream, it is easy and takes 5 minutes. I posted the recipe here. If you are really in a time crunch you can buy it. I prefer fresh and homemade. 
Slice up your Banana
Melt your chocolate by adding 1 tsp Vanilla extract, 1/4 cup heavy whipping cream and chocolate to either a double broiler -or- put it in a microwave safe bowl and microwave it at 50% power for 3 minutes. Stir until smooth. 
Layer your jar. Banana, chocolate, whipped cream... repeat until full. 
Store in the fridge until you are ready to serve. 
I made Strawberry Parfaits in a jar as well. Husband loves to take them to work with him as a treat.
