My husband loves black beans. I have always been a refried bean fan when it came to mexican food and dip, but I decided to go ahead and try making a black bean dip that he would like. We LOVED this dish. Full of protein and flavor. I ate just a bowl of this and felt completely satisfied. It is simple and quick to make. Enjoy!
Gluten Free Black Bean Dip

2 tablespoons butter
1/2 small sweet onion, diced
2 cloves garlic, minced
1-15 oz. can black beans drained and rinsed
1/2 cup salsa
1 cup grated cheddar cheese
1/4 cup cream
1/2 tsp salt
1/2 tsp pepper
1 1/2 teaspoons cumin
1 teaspoon chili powder
1/4 cup chopped cilantro
Saute onions and garlic together for 3 minutes. Stir in black beans, salt, pepper, cumin and chili powder and cook another 5 minutes over medium low heat. Stir in salsa, cheese and cream. Stir in cilantro.
Spoon into bowl and serve warm with tortilla chips
