This my dear readers is a rant.
I seem to have a lot more of those lately and I have come to realize I feel a lot better if I just type it out. Here is the thing. I really really really dislike my neighbor. I know, I know... love thy neighbor. Well I don't love her and at this point I do not think there is any way I could ever even look at her again. I am told every neighborhood has one. The miserable lady that has no life so she calls and complains about everyone. Yeah. That's the one I am talking about. This lady obviously has a such a horrible life in her $600,000 house with her mercedes that just sits in her garage because she never goes anywhere. The only time I see her she is screaming at her kids. She is always in sweats, no makeup, hair a mess. You know that is all fine. More power to someone if that is what makes them happy. However, this lady called animal control on us and said we neglect our dogs. Let me give you a little history on our dogs. We have 5. Peanut, the diva of our family is the oldest. We have loved every second of the 10 years she has been with us. She spends her time snuggled in her Bessie and Barney blanket that costs more than most of my dresses. She eats steak cut every day for her because she has severe allergies and is allergic to every kind of dog food out there. Cece is a rescue that is the love of my husbands life. We call her a fat little bowling ball because she is a fat and happy girl. They both enjoy coming with us everywhere, they sleep in our bed and really are the center of our lives. Here they are dressed up for Halloween with my hubby.
Maggie is a lab mix rescue that we got from the humane society. She is super sweet and super sneaky. Her favorite past time is to go out back and wait for a rat to run back and forth along the fence. No, we don't have rats in the house, but the property near our home is a wildlife refuge and it has everything from coyotes to rats that some times meander on to our property. She keeps the rat away. We joke that the rat wears a top hat and does a dance just to taunt her. Here is a picture of her happy to be headed to dog beach.
Tots is my daughters sweet high energy pomeranian. She is also in the pic above happy to be going to dog beach. She spends every second she can being with Taylor and she is in many many recipe and review posts on this blog.
Spot is my sons extremely fat pomeranian. He has an underbite and we joke that he is just a really furry bull dog. Spot goes everywhere with Jordan. If Jordan goes to a guys game night. Spot tags along as one of the boys.
To say the least. Animal Control came in, saw the dogs and laughed. We did not get a ticket or a notice and he said these were some really spoiled happy dogs.
So what right? Nothing bad came of it so why am I SOOOOOO angry? Because I think of my dogs like my children. How would you like it if someone accused you of hurting your kids? Sorry, this is one I can't let go. The pathetic lady needs to go. Why does someone like that even live in a neighborhood and what on earth did she think she would gain from this? I was told revenge is best served cold. Any ideas? I know I am supposed to forgive. Ill wait until she is actually sorry. Maybe after I am done PMSing I will cool off.
Alright. I know you are all here to look at the recipe so I will get to it now. I must say I had to make this twice. The first time I was so angry and obsessing over my rude nosey neighbor that I actually forgot to add the gluten free flour. Needless to say it turned out to be a puddle of gingerbread. I guess I am not to bake when I am mad. Second time I had cooled off a bit and it turned out lovely.

Old Fashioned Ginger Bread gluten free
1/2 cup Organic Sucanat (you can use sugar if you don't have it)
1/2 cup butter
1 egg
1 cup molasses
1 tsp vanilla
2 1/2 cups gluten free all-purpose flour
1 1/2 teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon nutmeg
1/2 teaspoon ground cloves
1/2 teaspoon salt
1 cup hot water
preheat oven to 350 degrees Grease and flour a 9 inch pan.
In a large bowl, cream together the sugar and butter.
Beat in the egg, and mix in the molasses.
In a bowl, sift together the flour, baking soda, salt, cinnamon, ginger, and cloves. Blend into the creamed mixture.

Stir in the hot water. Pour into the prepared pan
Bake 1 hour in the preheated oven, until a knife inserted in the center comes out clean. Allow to cool in pan before serving.
