Triple Chocolate Bundt Cake (gluten free) and a GIVEAWAY!!!

The giveaway is after the recipe, instructions are below... in the meantime... I have been talking for the past few days via twitter, facebook etc... about this amazing triple chocolate cake. This cake... I cannot say enough about it. So moist, such good chocolate and rich and just mmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmm!
The best thing... No one. And I mean NO ONE. Including the picky boy, knew it was gluten free. I even could not tell and I knew it was. But I just kept saying "There is no way!".  But oh yes, there was a way. And here it is:

I worked with a new cake mix I have never tried before. Have you heard of Mina's? I had not heard of them before I saw them in Living Without. So I thought I would give them a try.
They have baking mixes, bread mixes and cake mixes... all gluten free. Taylor was excited for me to get busy and cook for her!
 Tonight... Mina's Purely Divine Gluten Free Chocolate Cake Mix.

I am in love. Not only did they make my job really easy... but it was "INSANELY good". Quoted by my husband who rarely likes to eat sweets. We were all saying how amazing it was and he broke down and tried it... then he proceeded to eat a whole piece. As I am posting this he is saying... "It was SOOOOO good!" 

Because I have not used this mix before. I documented every thing I did.... Fully thinking it may not turn out. Well, it did. And now I have it all here for you to replicate. I used healthy ingredients to make up for the sugars. So if you need to use different ingredients... go ahead. I can just tell you that if you proceed making this cake with the same ingredients I have below... you will have an experience of the palate kind. I am sure the basic mix recipe is great too. Since I tend to always be "outside the box" I went for something a little different.

For Cake
1 (16ounce) package Mina's gluten free chocolate cake mix
2 individual serving packs of Hateva chocolate almond pudding
1/2 cup Greek yogurt
1 cup Canola oil
4 eggs
1/2 cup warm water
2 cups semisweet chocolate chips
For white chocolate glaze
3 ounces white chocolate, chopped
2 tablespoons light corn syrup
1 1/2 teaspoons water
    Preheat oven to 350 degrees F.                   
For those of you that have not worked with Hateva almond chocolate pudding, it comes in two serving cups. I used both in this recipe. It is a healthy alternative to dairy pudding. This is what it looks like:
In a large bowl (I used my kitchenaid), mix together the cake and pudding , greek yogurt, oil, beaten eggs and water. 
Mix with a paddle attachment until smooth.

 
Stir in the chocolate chips 
Pour batter into a well greased 12 cup bundt pan.

 
Bake for 50 to 55 minutes.

Cool cake thoroughly in pan at least an hour before inverting onto a plate.


For the glaze Heat all the ingredients in a small saucepan over low heat, stirring constantly, until the white chocolate is melted and the mixture is smooth and of desired drizzling consistency.
Drizzle over the top of cooled cake.


Now serve and DIG IN!!!
